We cook Telangana's peppery, ghee-heavy roasts, Andhra's sour and searing gravies, and Hyderabad's slow, aromatic dum — without blending them into one polite "South Indian" plate. Gongura stays sharp. Ankapur stays country. Haleem takes eight hours.
Every dish is written in English, తెలుగు and हिन्दी, because the table it is served at speaks all three.
