We cook Telangana's peppery, ghee-heavy roasts, Andhra's sour and searing gravies, and Hyderabad's slow, aromatic dum — without blending them into one polite "South Indian" plate. Gongura stays sharp. Ankapur stays country. Biryani is sealed and slow-steamed.
Every dish is written in English and తెలుగు, because the table it is served at speaks both.
